
Chewy Granola Bar Recipe
- 2 cups rolled oats (slow cooking)
- 1/2 tsp baking powder
- 1/2 cup crispy brown rice cereal
- 3/4 cup oat flour (grind oats if you don’t have it on hand)
- 1/2 tsp salt
- 2 tsp pure vanilla
- 4 tbsp neutral flavoured oil
- 6 tbsp honey
- 2 packets stevia
- Preheat oven to 325.
- Mix dry ingredients well.
- Mix wet ingredients and combine with dry.
- Line a cookie sheet with parchment and transfer mix to pan.
- Lay a second piece of parchment on top and press down firmly while spreading mix into an even layer.
- Bake 15 to 20 minutes.
- Let cool completely before slicing into bars.

Mmmm! I love how you use stevia. I am still trying to figure out good measurements for it for baking as we’ve been using it forever now.

Sure you can! Just sub in a dry sweetener of your choice for the Stevia.
I have been trying to avoid refined sugar so I used Stevia instead. Stevia is a plant that is naturally sweet. If you’re trying it for the first time, look for a brand that advertises that it isn’t bitter. Some brands have an aftertaste.
I dislike the aftertaste of many sweeteners. I will give it a try.
Me too. Honestly, these are sweet enough, you might be able to get away with just honey, but I haven’t tried it myself yet. Let me know how it goes if you do.
